Whats for Dinner!



One of my favorite salads is a knock off from a salad from Earls restaurant in Canada. The reasons my family likes this meal is it is fast and we can customize it to each individual.

Start with a Caesar salad - watch the dressing this can kill you in the calorie department and the salt over load. We read the label for a couple things - sodium, cholesterol, and calories.

Croutons are a must - we make our own - 4 slices of toast, lightly buttered and dusted with garlic salt ( careful not to put to much ) Cut toast into croutons and place on a baking sheet sprinkle with Parmesan cheese and pop in the oven - toast up for a few more min till the cheese is melted. Watch to not over cook.

Skinless Chicken Breast or Chicken Fillets - 4-6 oz per serving. In a frying pan 1 tbps of oil we use grape oil but you can use olive or canola. Cook the chicken with pepper. When the chicken is cooked you can coat it all with hot sauce or in my house we take out 1/2 for the kids and they get bbq sauce tossed and cooked on it for a couple more minutes.

Serve the chicken on top of the salad toss on croutons and dust with Parmesan cheese if you like.
