1 bag of frozen Edamame
1 small bag of frozen corn
1 can of garbanzo beans
1 can of black beans
1 can of kidney beans
1 can of pinto beans
1/2 red onion diced
1/2 cup of chopped cilantro
Dressing
1/2 cup oil ( we use grape but canola would work)
1/2 cup of white vinegar
1 tsp salt
1 tbsp pepper
1 tbsp sugar
Rinse beans and put all ingredient in a large mixing bowl. whisk dressing together and pour over beans. Best is served the next day but can be eaten right away.
Great source of protein!
