Cantaloupe Salsa

One more reason I love HEB Central Market is my family loves to try new recipes along with exploring new vegetables and fruit.  It is Hatch Chile Season from what I can tell is it runs from the August 18th - August 31st. So we but Hatch Chile and pick up a couple recipes to try. Named for the town Hatch,New Mexico , these peppers have all different kinds of uses. Hatcharita, Hot Hatch Chile Ice Cream, and Hatch Chile Verde Skillet Macaroni and Cheese.

What we tried so far:

Hatch Cantaloupe Salsa ( played with the recipe we picked up in the store )

1 cup coarsely chopped cantaloupe* see below for substitutes
1/2 cup chopped red onion
2 Tbsp grapeseed oil ( olive oil will work )
Juice of one fresh Lime
3 Tbsp Cilanto
2 Tbsp Hatch Chile minced ( you could use jalapeno )

Chill 15 min or more and Serve. We will be eating it with chips but the recipe also suggested serving it or grilled chicken or Tuna.

* Things I would substitute for Cantaloupe - fresh pineapple, mango, honey dew, watermelon and even tomatoes
