Quick easy and Healthy - recipe for a family of 4
Chicken Souvlaki - my version
3 chicken breasts cut in to bit size pieces - put a small amount of oil and chicken in a frying pan add Greek spices to taste.
Lettuce
Tzatziki ( I found a very good one pre- made at Sam's Club but just in case you cant I have provided a recipe below )
Pita Pockets - stuff with lettuce, chicken and Tzatziki
Tzatziki Recipe
-this is very good with pita chips as an appetizer
* 16 ounces (2 cups) of thick Greek yogurt
* 4 to 10 cloves of garlic, finely chopped
* 1/2 cup of diced or grated cucumber (Kirby or "English")
* 1 tablespoon of olive oil
* 2 teaspoons of lemon juice
I serve it with my Greek Salad - Chop all ingredients in bit size cubes - 2 tomatoes, 3/4 of an English Cucumber, 1 red pepper, 1/2 of a purple onion
Toss all ingredients together with a Lite Greek vinaigrette and top with Feta Cheese
