Whipped Shortbread

I encourage everyone to cook and bake with your kids. I started at a very young age and have continued all my life, baking has always been stress relief for me. I have learned to make adjustments to many recipes when I do not have the ingredients in the pantry. This weekend my family decide late on Saturday they would like Christmas cookies, I have not done any baking yet as I will eat it and then all I will be doing is exercising to burn the calories. Right now my business needs me. So the cookies....I knew I would have all the ingredients for whipped shortbread....okay I thought I would. Shoot no corn starch! What could possibly substitute for corn starch? So I start reading ingredients and low and behold "Birds Eye Custard" by the ingredient list is mostly just corn starch. After the cookies cooled for about 2 seconds we dug in....Big C, says did you do something different to your cookies? these are the best shortbread I have ever tasted!

So my new recipe -

1 Cup Butter
1/4 cup Birds Custard ( In the US - available in the international section at some grocery stores - or online http://canadianfavorites.com/ )
1/2 cup powdered sugar
1 1/2 cup flour

Mix all ingredient, form into balls and place on baking sheet and put in the freezer for 10 min. Remove from freeze, put a thumb print and sprinkles. Bake at 350 for 15min or till bottoms are golden brown.

PS. All cookies are calorie free in December :-) just get out for a walk.

    The cookie recipe sounds great and I may try it, but when the temperature is -35 the calories will pile on because I am not out walking. A. Mary

  2. and if it is below -20 they are just calorie free not walking required :-)
