Curried Chicken Salad

One of my favorite summer recipes from my friend Pam:

2 Chicken breasts - chilled, cooked and diced
1 cup green grapes, halved
1/2 cup pecans, chopped
1/2 c water chestnuts, chopped
1/2 can crushed pineapple
4 celery stocks - diced
3 green onions, chopped

Dressing ( add just before serving)
1/2 cup light mayo
1T Milk
1T Soy sauce
1/2 tsp yellow curry powder

Serve in Pita Pockets, wraps, croissants or as a side dish or over a bed of lettuce.

    Coralee- Sounds awesome, I definitely will give this a try, except I don't eat mayo so I'll sub plain yogurt. Thanks for the great recipe!
